Pork Rub Recipe
Pat your shoulder of pork dry and add it to a foil-lined tin. Rub 2 tablespoons of Memphis Pork Rub into the meat firmly. Leave the pork to infuse for 10 minutes. minimum or for a couple of hours, or even overnight in the fridge for a much deeper flavour
The pork can cook for about 40 minutes in a hot oven.
Remove the tray and cover the pork in foil to make a sealed parcel and place the pork back in the oven on a low heat for 6-7 hours.
For the last ten minutes, you can turn the heat back up, open the foil package and crisp the pork up.
Once the pork has been removed from the oven, let it rest with a foil cover, for 30 minutes before pulling to shreds with your fingers. Pour any residual juices over, mixed with more rub, and serve.
Through cooking time, baste pork with apple juice to keep it moist.
