Quick Chicken Pitta with Papa’s Mexican Rub

  • 2 level tsp of Papa’s Mexican Rub
  • 2 boneless chicken breasts
  • 4 Pitta bread
  • Shredded lettuce
  • Sliced tomato
  • Sliced onion
  • Jar mayonnaise
  • Vegetable or olive oil

Method

Pat chicken dry and rub in 1/2 to 1tsp of Mexican Rub on each chicken breast depending on size. Heat 2 tbs vegetable or olive oil in a frying pan until hot.

Add chicken breast and turn down heat to medium and cook for approx 8 mins on each side. Ensure chicken is thoroughly cooked and remove to a chopping board and cut into thick slices.

Warm pitta bread and fill with sliced chicken, lettuce, tomato, onion and mayonnaise.
