Spiced Halloumi Cubes with Cajun Rub
On a lovely summer’s day, when you don’t quite fancy getting the barbeque out but you want something nice, refreshing, tasty and filling, why not try this little dish, which although simple, is bursting with flavour and texture!
After spraying your frying pan with oil and heating, take the Cajun Rub and sprinkle onto cubes of halloumi cheese. You can massage it into the cheese with your fingers.
Add the cubes to a hot pan and fry, tossing regularly, until golden and the kitchen smells wonderfully aromatic.
This dish can be served with fruity couscous with roasted vegetables and raisins, or it can be served with ripe avocado (which is a lovely, soft, mellow flavour and texture next to the spicy, saltiness of the halloumi), tomato, spring onion, cucumber, beetroot and salad. And for a nutty crunch, add some toasted pine nuts to finish.
