Here are a few recipes you can use with a variety of our Rubs

Recipes

Mediterranean Courgettes – All Purpose Rub

 Serves 4Mediterranean Courgettes - All Purpose Rub

Ingredients

  • 2 x tsp All Purpose Rub
  • 2 to 3 Medium Courgettes
  • 1 Small Onion
  • 1 Clove Garlic
  • 2 Tbs Olive Oil
  • 1 Tin Chopped Tomatoes

Preparation

Top and tail courgettes and slice into 1.25 cm slices. Chop onion and crush garlic. Heat the oil in a medium saucepan and add onion and cook over low heat until translucent and soft.

Method

Sprinkle in 2 tsp All Purpose Rub and cook for 30 seconds, add garlic and cook further minute then add tinned tomatoes. Cook for 10 minutes.

Add courgettes and stir to coat in the sauce – cover and cook on low heat for 10 minutes.

Serve with grilled or roast meat or chicken or toss with pasta for a quick vegetarian meal.

Authentic Cajun Red Beans and Rice

Serves 6

Authentic Cajun Red Beans and Rice

Add some Tabasco sauce for an extra little kick – and maybe a splash of cider vinegar in each bowl?

Ingredients

  • 2 tins red kidney beans
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons minced garlic
  • 2 stalks celery, chopped
  • 6 cups water
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1/4 teaspoon dried sage
  • 1 tablespoon dried parsley
  • 4 tsps Cajun seasoning
  • 500 grams sliced sausage
  • 4 cups water
  • 2 cups long grain white rice

Method.

In a skillet, heat oil over medium heat. Cook onion,  pepper, garlic, and celery in olive oil -3 to 4 minutes.

Tip rinsed beans into a large pot with 6 cups water. Stir in cooked vegetables. Season with bay leaves, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then simmer for about 30 mins

Stir sausage into beans, and continue to simmer for 30 minutes. Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for a further 20 minutes.
